Would someone like to explain to me how Friday seems to come around so fast?! I feel like it was Monday two seconds a go! That said, we've had a pretty good week so let me show you what we've been up to recently!
Recent Breakfast Indulgence: This oatmeal bowl was like having dessert for breakfast. It was made up of a chia oat base (1/2 cup oats, 2 tsp chia seed, 1 cup almond milk and a splash of vanilla) with toasted coconut, nutella and fresh strawberries on top. Hellllooooo heaven.
Recent Snack Obsession: After my friend Ali was telling me how much she loved our Single Serve Healthy Peanut Butter Cookie Dough, I rekindled my own obsession and have been eating it at least once a day. This batch I was a little too heavy handed with the milk but it was still so so good. You need to make it ASAP!
I've been working on lots of delicious new peanut flour recipes too so keep an eye out for some more soon!
Recent Favourite Breakfast: This banana bread wins the breakfast of the week award hands down. I've been working on tweaking banana bread recipes to create the best healthy gluten free banana bread recipe and I have managed to make the perfect one.
I cannot wait to share it with you all because we've fallen in love with it. We've been having a big thick slice for breakfast, toasted and topped with butter with a side of fresh fruit. Yum.
Recent Crafting: On Sunday Jesse and I built a terrarium for an upcoming post and I cannot wait to share it with you as it's such a fun idea!
Recent Workouts: We're back to HasFit workouts and it feels so good - I cannot recommend HasFit enough for free, at-home workouts. The rain has barely stopped all week so I was so thankful to have HasFit workouts to do. I'm someone who needs to move, so when rain stops me from working out I usually get cranky and restless - but luckily we can do these inside!
Recent Deliciousness: I forgot how much I love mixing peanut butter with coconut oil so that's been one of my other obsessions for this week. Here's yesterday's pancake lunch (because I had to test and photograph the recipe, you see!) topped with a peanut butter and coconut oil mix - yummmmmm.
Recent Fun (for Jesse): Jesse went and saw Queen in Concert with Adam Lambert on Wednesday night with my family and had an absolute blast. I stayed at home and let them enjoy themselves (as the tickets were expensive!) but they all loved it and were so glad they got to go.
Recent Food Love: I always hated cream for some reason, however, recently I decided to top my oats with some cream to make Strawberries and Cream Oatmeal and I've been obsessed ever since!
This bowl was made up of my favourite Chia Oat Base (1/2 cup oats, 2 tsp chia seed, 1 cup almond milk and a splash of vanilla) topped with cream and fresh strawberries.
And then when I had some leftover pumpkin puree, I decided to make some Pumpkin Pie Oats which I also topped with cream. It's seriously the best oatmeal topping if you're looking for a healthy yet decadent tasting breakfast.
This bowl was made up of a Pumpkin Spice Chia Oat Base (1/2 cup oats, 2 tsp chia seed, 1 cup almond milk, cinnamon, nutmeg, ~1/4 cup pumpkin puree and a splash of vanilla) with chopped walnuts and maple syrup mixed in, topped with cream and a sprinkle of walnuts. Heaven!
And yes, we are working on a special little oatmeal eBook which should be finished in a month or two - so if you're an oatmeal fan, you'll want to keep an eye out as it's filled with the more incredible oatmeal combinations!
Recent Cuteness: I got some cute new treat bags which I stamped with my custom made Southern In-Law Stamp so I can share yummy treats with our friends and family in super cute packaging. It's seriously dangerous when you design things like stamps and packaging for clients because you then feel like you neeeeeeeeeeeeeeeeed to have all of these things for yourself too ;)
Recent Plans: We're thinking of heading to the Farmer's Market this weekend to get out of the house and get some delicious fresh produce! We also have plans for double pancake breakfasts (as we have a weekend off this weekend so we'll have more time for a delicious breaky!) and then we're going to go out to buy some new dumbbells for Jesse and I think I'm going to get my bake on!

I love free video workouts at home too! Don't have to pay for a gym membership. ;) And the terranium craft sounds fun, looking forward to hearing more about it. I'm planning on checking out this awesome new organic juices and organic eats place near my hometown called Native Nectar tomorrow to talk with the owner because he asked me to help him by getting out a blog post about his kickstarter campaign to open up a second shop soon. I'm so excited about the restaurant too because we need more healthy eating options in my neck of the woods (Northwest Arkansas).
