I think you guys know by now that I love a weird combination or two. Goat cheese and nutella sandwiches, vegemite pasta, avocado, almond and raisin brown rice salad and vegemite pizza flatbreads,.... But why do I love weird combinations?
Well because with all of my allergies and intolerances there are limited foods which I can eat, so I have to get creative!
This recipe came about on a night where I had veeeeeeeery little in the fridge. No cream cheese, no avocadoes, no meat - I was scraping bits and pieces together to make dinner and what I created was actually wonderful and ridiculously simple.
Now, I'll admit it soundsssssssssss a little odd - but it sure is delicious so let me give you the recipe >>
Savoury Mushroom Rice Bowl serves 1, easily multiplied
gluten free, vegan, low fat, vegetarian. one pot recipe
1 serve cooked brown or white rice
1 cup mushrooms, thinly sliced
1 cup baby spinach leaves
1-1 1/2 tsp vegemite*/gluten free mighty mite
Optional: cheese to sprinkle on top, cooked chicken, extra veggies etc.
Saute your mushrooms in a small saucepan with a little bit of water until browned and cooked through.
Next add in your baby spinach leaves, allowing them to wilt.
Once your spinach has wilted, add in your rice and vegemite/mighty mite, adding a little bit of water so that everything can mix together.
Add any other additional ingredients you like and serve immediately!
Tip: For a creamier bowl, we like to add a tablespoon of cream cheese to the mix!
*Vegemite is not gluten free so use Mighty Mite or your favourite gluten free alternative!

I also love sweet potatoes with cottage cheese, almond butter and cinnamon and Jesse thinks that's the grossest combination ever :P

I've just bookmarked this. Brown rice is my favorite rice, and with spinach and mushrooms- yum! I love really weird combos. I can't think of the weirdest right now, but I've put some REALLY strange things in smoothies xx

ReplyDeleteHi Yembz, this recipe is designed to be baked in a single serve ramekin as the recipe says - or you can multiply the recipe for a larger baking dish
