Recipe: Single Serve Banana Chocolate Chip Breakfast Bake

Single Serve Banana Chocolate Chip Bake - Oven or Microwave Recipe - Gluten free, healthy, low fat, sugar free

Mornings have been busssssssssssssssssssssy in the Southern In-Law house lately. I'm up at 6am, straight in the shower and then out to get dressed and get my hair and makeup done before making Jesse and myself breakfast, eating said breakfast whilst madly reading and replying to emails, putting together lunches for Jesse and I and then rushing out the door at 7:20am.

When mornings are like this, breakfast needs to be fast and breakfast bakes are my go-to. Usually I make them in advance and all I have to do is pop some nut butter on top, grab a fork or spoon and devour. 

However, after coming back from Louisiana, I was seriously craving a breakfast bake but didn't have a single one in the freezer - so I had to get creative. A spotty, brown banana was calling out to be used and I decided to put together a simple single serve Banana Breakfast Bake (with chocolate chips because hey, chocolate makes everything better) that could be made either in the microwave (for a super quick decadent tasting breakfast) or in the oven (if you have some extra time on your hands) 

And boy, oh boy, was it delicious!
So let me give you the recipe >>

Single Serve Banana Chocolate Chip Breakfast Bake - Oven or Microwave Recipe - Gluten free, healthy, low fat, sugar free

Banana Chocolate Chip Breakfast Bake serves 1
gluten free, low fat, single serve, sugar free 

1/4 cup (25g) gluten free quick oats 
2 tbsp (15g) buckwheat flour or GF plain flour 
3 tbsp (20g) peanut flour or almond meal
1/4 tsp baking powder
1 ripe medium banana (~70g banana)
1 tsp vanilla 
1 large egg white 
~1 tbsp chocolate chips (optional)
Optional: maple syrup/honey/sugar if you like things sweeter or mix ins of your choice (nuts, seeds etc) 

Mash your banana and mix in your egg white and vanilla. 
Add your dry ingredients and mix until just combined. 
Pour into a greased, oven/microwave safe ramekin
If baking: Bake at 180°C/350°F for ~15-20 minutes
If microwaving: Microwave for 1 minute intervals until cooked (from memory, we usually cook it for about a minute and a half in total but it depends on your dish size and microwave strength.

As I work from home, usually I have some extra time up my sleeve, however, I always make Jesse's breakfast and lunch first and then make my breakfast and eat it whilst spending some time in God's Word in my favourite red chair. 
What's the one food you always crave when you're away from home?
I kind of always crave everything because usually I'm very limited with what I can eat whilst away from home.

  3. That's why we freeze everything... well, almost everything - our favourite cookie recipes don't ever last long enough to need to be frozen haha.


    But as for breakfast bake - we make up big batches, slice them up and freeze them for quick breakfasts! I just defrost one in the fridge overnight and i'm good to go in the morning!

    I don't have the nutritional break down for this recipe, however, if you use a website/app like My Fitness Pal you'll be able to work out the nutritional info based on the ingredients you use :)


    I did see one pin on Pinterest where a reader had marked the recipe as 339 calories if that helps any (but I'm not sure of her ingredient choices so it could differ!)
