Recipe: Apple Walnut Muffins

Healthy Apple Walnut Muffins Recipe - healthy, gluten free, refined sugar free and freezer friendly muffin recipe

I'm very particular when it comes to putting nuts in muffins. It has to be a certain type of muffin in order to have nuts in it - Banana Muffins? Sure Apple Muffins? Only if they're walnuts.... Blueberry Muffins? Don't even think about it. 

Apples, walnuts and cinnamon are a classic combination in my brain - so I knew I had to come up with the perfect muffin recipe that combines all three.

They're moist and delicious, nutty with just the right amount of cinnamon and have the perfect nutty muffin texture thanks to the addition of oats. 

What the don't have is refined sugar - meaning these are the perfect healthy muffin to have for breakfast, with lunch, or for dessert or a healthy snack. They're an anytime muffin that you'll come back to over and over again - and they can be made in big batches and frozen so you always have one on hand.... well.... until you eat the last one like I did today...

Sugar Free Apple Walnut Muffins Recipe - healthy, gluten free, low fat, refined sugar free and freezer friendly muffins recipe

The Best Apple Walnut Muffin Recipe makes 10 
gluten free, low fat, sugar free, healthy and freezer friendly 

1 large apple or 2 small apples, grated (about 150g) 
1 1/2 cups (360g) unsweetened applesauce
1/3 cup (80g) egg whites or 1 large egg
2 tsp vanilla 
1/4 cup honey (or more if you like things sweet
1/2 tsp cinnamon 
3/4 cup (75g) gluten free quick oats
3/4 cup (90g) gluten free plain flour (or plain/wholewheat flour for non-GF)
1/4 cup (25g) almond meal 
1 tsp baking soda 
~1/4-1/3 cup walnuts (optional but recommended)

Preheat your oven to 180°C/350°F
Grease and/or line a 12 cup muffin tin and set aside. 
Grate your apple(s) into a medium/large mixing bowl. Add your applesauce, egg whites (or egg), vanilla, honey and cinnamon. 
Mix in your oats, plain flour, almond meal and baking soda, mixing until just combined. 
Fold in your walnuts or other mix ins (if using) and spoon your mixture into your muffin tins.
Bake for 20-30 minutes, or until cooked through and a skewer inserted removes clean. Keep an eye on them as baking times will differ depending on your muffin size/oven/climate etc.

What's one food that you're really particular about? 
I'm kind of particular about most foods.... but the worst thing for me is when certain foods touch/mix together because it grosses me out. If I'm eating salad with hot food, they need to be separated because I don't want my salad to be all warm and wilted - I think it probably stems from my sister's habits as she was always a food mixer as a child (mixing mashed potato and gravy and whatever else she had on her plate into a gross mix)
And are you like me and hate food touching? Or am I totally weird?

  3. I love how muffins can essentially become anything you want them to. They're so versatile and AMAZING for breakfast or a snack or anytime really. These look so so good. They apple walnut combo is making me crave fall!
