When you're allergic to pretty much everything - you've got to get creative. You see, not eating tomatoes means that "normal" pizza is out of the picture, so when I decided to make pizza flatbreads for Jesse and I one night, I decided I'd try something totally new.
Enter stage left, Vegemite Pizza.
Say whaaat?! Bear with me, loves - it's not as weird as it sounds. It's actually Mighty Mite Pizza to make it gluten free, but we tend to just call it Vegemite anyway.
But back to what I was saying, Vegemite Pizza totally works. Vegemite, cheese and whatever other add-ins you feel like! We added sauteed spinach and mushrooms but chicken works really well too!
It's not a normal pizza, granted - but it is delicious and I even had Jesse the skeptic convinced.
But if you're not a Vegemite fanleave right now it's okay, because you can use the pizza flatbread recipe and add whatever toppings you feel like!
If I'm not making Vegemite Pizza, I usually make a Pesto Pizza with basil pesto as the base whilst Jesse opts for a pepperoni pizza. The flatbreads are quite small (think personal pizza size) but you can easily double or triple the recipe for a bigger pizza!
Best of all, they are soooo easy to make - so you don't have to worry about kneading and rolling and waiting for ages! We've even made them from start to finish in half an hour - so they're way quicker (and healthier) than takeaway pizza! ;)

But let me give you the recipe! >>
Vegemite Pizza Flatbread makes 2 small pizzas or 1 larger pizza
gluten free, vegan, dairy free, eggless
For the dough:
2 (10g) tsp yeast
1/2 cup warm water
1/2 cup (120g) buckwheat flour (or wholewheat flour for a non-GF version)
1/2 (120g) cup gluten free self raising flour
Toppings for Vegemite Pizza Flatbread: (feel free to top your pizza flatbread with whatever you like!)
Vegemite/Gluten Free Mighty Mite Spread
1 cup Mushrooms, sliced and sauteed with salt and pepper
Spinach, sauteed with mushrooms
Grated Mozzarella Cheese
1 cup Mushrooms, sliced and sauteed with salt and pepper
Spinach, sauteed with mushrooms
Grated Mozzarella Cheese
Mix all of your ingredients together until just combined and leave to sit for 10 minutes to allow the dough to rise.
Preheat oven to 200°C/400°F
Take your dough out of your mixing bowl and place onto a baking tray lined with baking paper, pressing dough out into a pizza shape with your fingertips.
Top your dough with your base and toppings of choice and place into the oven for 8-10 minutes or until your cheese is melted and your crust has browned and cooked through.
Slice and serve! (These also make really good on-the-go lunches - just leave them to cool and place them in the fridge to eat cold or at room temperature!)
