Hey sweet peas! Happy Friday!
This week has my brain here, there and everywhere as it was a short week (Monday was a public holiday) and I had appointments on days when I didn't have appointments, Jesse was home early most days and my Mum worked totally different days than usual. But nevertheless, I definitely know that it's Friday!
But let's have a look at what we've been up to during this topsy turvy week!
Recent Yums: I have been baking up a storm this week! From cookies to cupcakes to brownies and these ridiculously good coconut macaroons. I've never had or made a macaroon before, but it's safe to say I'm obsessed now.
The batch of brownies on the right are Almond Meal Brownies which were all sorts of deliciousness - recipes coming soon, my sweets!
I also made an Angel Food Cake which whilst totally delicious is a tiny bit too sticky for my liking so I think I need to keep on working on that (though I've never had angel food cake so I don't know if that's even normal?)

Recent Additions: You may already know that in addition to being a blogger, I also run my own business. Part of that business is graphic design and I am constantly designing things for clients - whether it's invitations for someone's birthday party, an art print for someone to give as a gift or a corporate logo or stack of flyers.
I decided to spend some time designing something for Jesse and I so I put together this print (which looks way better in person!) which is now huge and hanging on our wall!
I'm actually super happy with how it came out and so glad I took the time to do something for us! Now it's not just my clients with my designs on their wall (but I am going to show you some of their pieces - I'm just waiting on a couple to give their pieces as gifts and then I'll show you!)

Recent Excitement: Now this is really lame, but I've kind of been waiting for ever to crack a double yolker - and yesterday it finally happened!
We're also super excited to head back to Louisiana - time is flying by!
Recent Things to be Grateful For: Well, everything in my life, but especially my husband. I was really sick over the weekend and Jesse made sure to look after me. A weekend of watching Supernatural in bed with hot tea, cozy blankets and dinner in bed. I'm lucky to have a husband who loves me so incredibly much!
Recent Health Update: I headed back to the haematologist this week and found out that I don't need another iron infusion for a while! My iron level is going down, however, so he thinks I will need another one by the end of the year but he thinks I'll need one around October so there's still a while to go!
My iron level and iron saturation level went back down to below normal, however, the haematologist is going off my ferritin levels which are just above normal (despite dropping from 350ish to 200ish). Don't ask me why the actual iron level isn't important because I'm still confused on that one - all I know is that they use the ferritin level to determine whether a person is suffering from anaemia or not.
So in short, all is well because Kristy doesn't have to be stabbed with an IV just yet ;)
But tell me, how has your week been?
What are you grateful for this week?
And what's the best thing you've made/eaten/read/watched this week?
It must have been this latest batch of eggs because I just had my first double yolk aswell
ReplyDeleteToo funny! I wonder if they lay double yolks at a certain time... hmm
ReplyDeleteditto! sometimes the smallest things can make us smile!~
ReplyDeleteExactly! It doesn't take much!
