Recipe: Cheesy Chicken and Mushroom Rice Bake

Healthy Creamy Chicken and Mushroom Rice Bake Casserole Recipe - Gluten Free, Low Fat, Eggless, Egg Free, Vegetarian Option

I'm a friendly person... but when it comes to winter, we are not friends. I'm a cold bug at the best of times so when winter rolls around I'm desperately searching for thermal leggings, wondering how many layers I can put on before I look like the Michelin man and just about hugging the fireplace each night. 

You'll find me clutching hot cups of tea and drinking hot water when I've drank so much tea it no longer tastes good. 

You'll see a scarf on my neck and a beanie on my head and I'll probably have fluffy socks hiding under my boots. 

When it comes to be thinking about dinner, you'll find me wrapped up in a blanket, deep in thought thinking about how I can make sure I cook at least one thing in the oven every single night so I can stand by and watch it absorb the oven's warmth.

Healthy Cheesy Chicken and Mushroom Rice Bake Casserole Recipe using Greek Yogurt  - Low Fat, Gluten Free, Vegetarian Option, Eggless, Egg Free, Clean Eating Friendly

That's why I like rice bakes and casseroles like this. They're easy to make, super delicious anddddddddddd I can soak up the warmth of the oven whilst I'm at it. Truth be known - I'll probably cook it longer than needed too because I don't want to leave my Bahama-like standing place. 

It may not be the prettiest dish on the planet - but this recipe is super dooper simple and absolutely delicious - and it certainly doesn't taste "healthy" either. 

But let me give you the recipe >> 

Healthy Cheesy Chicken and Mushroom Rice Bake Casserole using Greek Yogurt  - Low Fat, Gluten Free, Vegetarian Option, Eggless, Egg Free, Clean Eating Friendly


Cheesy Chicken and Mushroom Rice Bake serves 1, easily multiplied
It may not be the prettiest dish, but it sure is delicious!
Healthy, gluten free, low fat, sugar free and whole grain 

1 cup mushrooms, thinly sliced (optional) 
1 clove garlic, crushed
A sprinkle of fresh basil and parsley (or dried herbs)
1 serve cooked brown rice 
1 serve cooked chicken breast (you can use a store bought bbq/rotisserie chicken if you like or cook some with whatever seasonings you like)*
1/3 cup reduced fat/fat free plain greek yogurt
Salt and pepper, to taste
~1-2 tbsp parmesan cheese, to top

  • Preheat oven to 200°C/390°F. 
  • Saute your mushrooms with your garlic and herbs until softened. 
  • Stir in your chicken and rice and add in your yogurt, seasoning to taste. 
  • Pour your rice mixture into a small baking dish or ramekin and top with your parmesan cheese.
  • Bake until your cheese is melted and golden.
  • Serve hot.
*Feel free to leave out the chicken for a vegetarian version!

  7. Looks great but unfortunately not sugar free. There is sugar in Greek Yogurt.

  8. Hi Teresa, this recipe is actually free from any added sugar. Greek yogurt only contains naturally occurring sugar and has no added sugar - just as almost every other natural food has (carrots, bananas, broccoli, rice etc)

  9. Looks yummy I will try it out this week. my boys hate mushrooms though sad I know. But since it's in a ramekin I can add something different into theirs! Thanks. I hate WINTER! IN Wyoming we live near the mountains in a valley so several weeks out if the year it's below zero Blech...my fave dish is elk stew it's so yummy.
