I know, yesterday I didn't post a Recent Things Post! I got a bunch of emails and facebook messages asking me where it was and the truth is.... I'm lazy. And sick - and when I'm sick I'm lazier than lazy. But alas, today I'm feeling a lotttt better - my voice is back and I'm just left with sniffles and random coughing fits ;P
I'm also seriously lazy when it comes to breakfast. I wake up, make Jesse breakfast and lunch and by the time I get to my breakfast - I just want to eat! That's why I'm so obsessed with breakfast bakes - they take 10 minutes to make during the day and give me anywhere between 4-12 breakfasts that I can freeze and defrost for a quick and easy breakfast.
It's just a bonus that they're absolutely delicious and totally healthy whilst they have you feeling like you're eating dessert for breakfast.
This Apple and Banana Breakfast Cake is one I randomly whipped up this week - I had way too many apples in our fruit bowl that needed using up (this is what happens when you forget to tick apples off your grocery list when you buy them the day before and you totally forget you ever bought them) as well as some super spotty bananas.
Jesse asked me why I sprinkled oats over the top and laughed when I told him it was just to make it "look pretty" - but it does make your breakfast feel that tiny bit fancier.
Breakfast is the most important meal of the day - so you've got to make it the most enjoyable, right? Right!
I promise you this breakfast bake is ridiculously enjoyable - spread some peanut butter on top, top with a dollop of cream cheese or yogurt and you'll be starting your day off in heaven.

Apple and Banana Breakfast Bake serves 6
gluten free, low fat, sugar free, clean eating friendly
2 large bananas, just over 1 cup mashed (~250g)
1/2 cup (120g) unsweetened applesauce
3/4 cup milk of choice
2 tsp vanilla extract
1 egg
1 1/4 cup (125g) gluten free quick oats*
1/2 cup buckwheat flour**
3/4 cup GF plain flour**
1 1/2 tsp baking powder
3/4 tsp baking soda
1 tsp cinnamon (optional)
Optional: If you like things sweeter, add 1/4 cup to 1/3 cup maple syrup or honey. Feel free to add in nuts or whatever fruits you like! We like to add in a chopped apple for some added flavour and texture.
Preheat your oven to 180°C/355°F
Grease and/or line a medium round cake tin or 8x8" square cake tin. You can also use individual ramekins if you prefer.
Mash your banana and add in your applesauce, milk, vanilla and egg (and sweetener if using).
Stir in your oats, flours, baking powder and baking soda, cinnamon and any additional mix ins.
Pour your mixture into your prepared cake tin. Top with some extra oats if desired.
Bake for 45 minutes to 1 hour, depending on the size of your tin - keep an eye on it and take it out of the oven as soon as it is golden on top and a skewer inserted into the centre comes out clean.
*If you don't have quick oats, just slightly grind gluten free rolled oats in your food processor or blender
**If gluten free isn't necessary for you, feel free to use 1 1/4 cups whole wheat flour or a mix
