I'm sick with the flu and all I want to do is crawl my croaky voiced self back into bed - but instead I have a jam packed day ahead of me.
Yesterday I was supposed to be taking a nap as I hadn't slept at all the night before and Jesse and Chanel joined me... but guess who didn't get to sleep....
There are quite a few SIL Readers ordering and requesting custom designs from Too Many Hats and Christian Designs and we're super excited!
This week is going to be bussssssssssssssssssssssssssssssssssssssssssy - and I kinda wish we had another long weekend at the end of it ;P
Current dilemma? A bowl full of ripe bananas and no motivation to make anything (but at the same time, totally wanting banana muffins or banana cheesecakes... womp womp).
I made apple cheesecakes on Friday which Jesse first questioned and then rated them a 10/5 (they're seriously that good) so I need to get a wriggle on and share these cheesecake recipes!
But tell me about your weekend - what do you have planned for today?

ReplyDeletehaha, i always have too many ripe bananas and no motivation to do anything about it! well, acutally thats a lie --more like i don't want to end up eating whole loaves of banana bread myself because that's usually what happens! get well soon! flu is no fun :/

ReplyDeleteHaha I'm glad I'm not the only one! We freeze alot of what we bake so then we have healthy snacks on hand when we need them!
ReplyDeleteThat said, if it's something like cheesecake or brownies... it rarely ever gets frozen ;P Or 1 or 2 pieces may make it to the freezer. But hey, they're small batches ;P

ReplyDeleteThese are in the oven now. The mixture tastes lovely but worried I've made a mistake as I wasn't able to "pour" the mixture into the tins...the mixture rolled into balls. Any idea what I might have done wrong? The only change I made was using coconut flour with my gluten free flour (1 cup of each) :)
ReplyDeleteHi Katy, using coconut flour was the reason your batter was so different. You can't actually sub coconut flour for regular flour in a recipe as it has completely different baking properties. Coconut flour requires a lot more liquid than regular flour and that's why your mixture was so dry!
ReplyDeleteIf you want to use coconut flour in a recipe, be sure to look for a recipe which gives you options for using coconut flour - rather than just substituting it.
