Recipe: Crispy Nutella Mascarpone Bites

Crispy Nutella Mascarpone Bites - gluten free, low fat, no bake, three ingredient recipe

Phew! I have been a busy busy bee this week. The last couple of days, the only time I've gotten to sit down is when I'm eating (if I'm lucky) or when I'm done for the day and sit on the couch with my family. 

I've got all of these yumlicious things I want to make and share with you but I haven't had the chance - but I'm hoping to fit in some serious cooking time tomorrow so I can whip up a couple of Easter-y treats I have in mind. 

I do, however,  have one treat I want to share with you that's perfect for busy bees. It's seriously simple and takes just seconds to make - and only three ingredients. 

It's hardly a recipe because it's that simple, but I promise I'll be back tomorrow with something a little more challenging - I'm just about to rush off to make dinner for Jesse and I and then hopefully have a chance to relax!

But let me give you the recipe! >>

Crispy Nutella Mascarpone Bites - gluten free, low fat, no bake, three ingredient recipe

Crispy Nutella Mascarpone Bites makes 20 small bites 
 three ingredients, gluten free, no bake

2 tbsp mascarpone 
3 tbsp nutella 
1 cup puffed rice cereal 

Mix all of your ingredients together and either spread out onto a baking dish or drop by the spoonful into a paper case lined mini muffin tray or silicone mini muffin tray. Freeze for about 30 minutes before devouring ;) 

We like these best straight out of the freezer and we usually let them freeze until solid and then keep them in a ziplock bag so we can munch away when we want something sweet.

  1. I've never worked with mascarpone before, but have always wanted too. This recipe looks awesome girl. As for your question, my weekend has been busy & I'm completely exhausted. Ha! How's yours been? :)

    I think my week has been exactly the same as yours - I am so ready for the weekend, but then I know how busy my weekend is going to be so I feel like I need a second one to back it up haha.
