Recipe: Avocado and Basil Spaghetti

Want to know how you give a blogger a heart attack? Let her go to check her blog in the morning to write a post and have the blog disappear from the internet. Hole-eeh-smokes, it was like losing my first child in a shopping mall... well... what I imagine it would be like seeing as Chanel doesn't go to shopping malls and I don't have real children. 

The blog was down all morning and redirecting to the Google homepage, but nevertheless! It's back up and running now!

But enough about that! Do you know what I find reaaaally satisfying? Opening a fresh avocado to find it is perfect inside. Especially when said avocado cost you $4 for the teeniest tiniest avocado you've ever seen. Seriously Australia, what's up with your avocadoes at the moment? 

But nevertheless, back to the perfect avocado. When it's perfectly green, creamy and smooth. Major win, friends.... major win. 

When I do find those elusive perfect avocadoes, I try to make sure they're used in the best way possible and not just shoved within sandwiches or hidden away. This Avocado and Basil Spaghetti is one of my favourite ways to use avocado (avocado quinoa being the second - funnily enough I posted that recipe exactly one year ago today) and I've been eating it multiple times a week. The basil takes it to a whole new level - plus it makes it a teensy bit fancier because you know... green garnishes totally take a dish from drab to fab, right? 

But enough chitter chatter, let me give you the recipe! >>>
Healthy Avocado and Basil Spaghetti Recipe - low fat, gluten free, sugar free, vegan, clean eating friendly

Avocado and Basil Spaghetti serves one, easily multiplied
gluten free, low fat, sugar free, clean eating friendly, vegan

1 serve of your favourite pasta, cooked and rinsed (gluten free pasta for GF)
a handful of fresh basil leaves, finely shredded
1 small clove garlic, crushed
1/4 avocado, mashed 
salt and pepper, to taste 
optional: parmesan cheese to top 

In a small saucepan, heat up your basil and garlic over a medium heat until fragrant.
Add in your avocado and salt and pepper and a tiny bit of water to make more of a saucelike consistency. 
Add in your pasta and stir until your pasta is heated through and your sauce coats the pasta. 
Remove from the heat and pour into your serving dishes, topping with extra basil and/or parmesan cheese if desired. 

So easy, but crazy delicious!

And when's the last time you totally freaked out? 
Prior to this freak out, I had a freak out on Friday when I realised I couldn't remember anything I had said/promised anyone the week before and I wasn't sure whether I had offered to help with the 4pm or 6pm youth group. I thought I was signing up for the 6pm youth group but still had a major freak out and couldn't stop stressing until I got to the church and found out that indeed I was right and I hadn't let anyone down :P

  1. Totally agree with having blood work done, even just for peace of mind! My iron levels were low'ish when I was early on in my pregnancy with Thomas, and I was able to correct it simply with nutrition!

  2. It's worth mentioning that this is only gluten-free if gluten-free pasta is used. Those with allergies will likely realize this, but maybe not!

    Oh that's lucky! The most frustrating thing for me was not being able to fix my low iron levels with nutrition as that's how I'm used to fixing everything! I guess my body decided it was its turn to take charge ;P

    Ahhh I'm so sorry about your blog--what a scare! This pasta looks so good. I'm currently going through a major avocado obsession and this looks like it would help curb my daily craving.
