Recipe: Apple Cinnamon Oatmeal with Creamy Mascarpone

I have to admit, whilst I do love my breakfast bakes, sometimes I just can't pass up a warm and comforting bowl of oatmeal - especially now that Sydney's mornings are a little bit colder and we're waking up in the dark. 

Usually when I decide to have hot oatmeal, it's my standard combination - banana oats topped with ooey gooey peanut butter, however, recently there's been a new favourite topping in town: mascarpone!

You see, until recently, I'd never been much of a mascarpone fan - but as most of my new discoveries happen, it was on sale at the grocery store and I picked myself up a tub. 
I first tried it on crepes - these Healthy Apple and Cinnamon Crepes with Mascarpone Topping, actually. Then I tried it on a breakfast bake instead of my usual cream cheese - just add a dash of maple syrup and a tiny sprinkle of salt and spread it on top of the breakfast bake. Deeeeelicious! From that point onwards, I was hooked. 

It's safe to say, I fell head over heels for mascarpone. Whilst the mascarpone is delicious cold - something magically happens when it starts to warm up. It's becomes a super creamy, sweet, heaven-in-your mouth flavour bomb and it is oh so good - so naturally, I had to try it with oatmeal.

This oatmeal recipe, my loves, is a must make. The warm and comforting oatmeal, the chunks of apple and the cool, creamy mascarpone. Heaaaaaaaaaaven.

Oh and don't worry, if you're thinking it's still too hot for oatmeal, the cool creamy mascarpone will totally change your mind! I promise it's worth it! ;) 

But let's get onto the recipe! >>
Gluten Free Apple Cinnamon Oatmeal topped with Creamy Mascarpone - Healthy Breakfast Recipes

Apple Cinnamon Oatmeal topped with Creamy Mascarpone serves 1
 gluten free, low fat, sugar free, clean eating friendly

For the oatmeal 
1 cup almond milk 
1/4 cup applesauce 
1 apple, diced (I used a pink lady apple) 
1/2 tsp cinnamon (optional) 
Pinch of salt

For the mascarpone topping 
1 heaped tablespoon mascarpone 
Maple syrup, to taste
A pinch of salt 
  • In a small saucepan over a medium heat, add your oats, milk, applesauce, diced apple, cinnamon and salt. Cook your oatmeal over medium heat until it reaches your desired consistency. 
  • Meanwhile, mix together your maple syrup and mascarpone.
  • Once your oats have finished cooking, pour them into a bowl, garnishing with sliced apple if desired and topping with your mascarpone mix.
  • Enjoy immediately!

    Hi Lucy,
    Generally our competitions are open to all Australian residents (unless otherwise specified) so our winners are chosen based on their answers! We judge the answers using a database which hides all other information and then pick our winners based on that.

    Haha no! It's an italian cream/cheese that's usually used in tiramisu! It's creamier than cream cheese in both texture and taste.
