Recipe: Haloumi Noodle Salad

Haloumi Noodle Salad Recipe - healthy, gluten free, low fat

The queen of weird combinations has done it again, but hey, at least I'm not boring! Haloumi isn't what you'd usually find in a noodle salad, I know - but forget the norm; we're focusing on flavours! 

I never worry about what's "normal" and that has a lot to do with my food allergies and intolerance. I focus on flavours and try to make the most delicious flavours out of the foods I can eat! Jesse thinks it's absolutely bizarre - but he doesn't complain when my flavour experiments go right.

The unique nutty flavour of the haloumi goes perfectly with this super simple noodle salad and I've been enjoying it for quite a few lunches and dinners since making the first one! 

I know it's not normal, but I dare you to try it - so, let's get onto the recipe! >>

Haloumi Noodle Salad Recipe - healthy, gluten free, low fat

Haloumi Noodle Salad serves 1, easily multiplied 
gluten free, low fat, nut free, clean eating friendly 

A few slices of haloumi cheese, grilled until golden 
Cooked gluten free vermicelli rice noodles
1 smallish carrot and 1/2 a cucumber, cut into matchsticks/strips/julienned/peeled into ribbons 
~1/4 avocado, diced 
Baby spinach leaves 
Finely chopped fresh basil and parsley 
Salt and pepper 

Mix all of your ingredients together until incorporated and seasoned to your tastes (feel free to add dressings or flavourings if you like) and pour into a serving dish (or eat straight from the mixing bowl :P)
