Recipe: Raw Mint Chocolate Bites

Well hey there! Did you know that today (February 19th) is apparently Mint Chocolate Day? No? Well you do now! 

I don't know about you, but I think mint and chocolate are a match made in heaven. Actually... I kinda think chocolate and most flavours are a match made in heaven....

When I was little, I was a super fussy eater. In fact, more often than not my Mum would pack me a peanut butter or vegemite sandwich whenever we went out to eat at a restaurant (funnily enough, that's what I have to do now with all my allergies :P). The one thing I did like, however, were those little after dinner mints they often had at restaurants. That's where my mint chocolate obsession began.

Over the years, I experimented with mint chocolate flavours but I tended to stick to things that were already mint chocolate flavoured (like Lindt Dark Mint Chocolate) because I had some terrible experiences with mint extract and mint essence that scared me off a little bit. 

Let's just say... unlike vanilla and other flavourings, a single drop of mint extract can take you from delicious to oh dear goodness I can't feel my face. Mint extract can be lethal if you use too much, so don't be thinking you can pour it right in - when I first started experimenting with it, I did just that and I was so scarred I didn't touch the bottle again for 6 months.

Healthy Raw Mint Chocolate Bites Recipe

Raw Mint Chocolate Bites Recipe - the perfect raw snack that tastes just like a chocolate bar but is totally healthy! This recipe is gluten free, raw, paleo, vegan, grain free, egg free, peanut free, no bake and SO easy to make!

ingredients:

  • 1 1/2 cups (250g) pitted dates (fresh or dried is fine, just make sure they're at room temperature)
  • 3/4 cup (140g) whole raw almonds*
  • 1/2 cup (40g) unsweetened cocoa powder
  • 1 tsp mint essence/extract
  • 1/4 cup chocolate chips/chopped chocolate (optional but recommended!)
  • Pinch of salt

How to cook Healthy Raw Mint Chocolate Bites Recipe

  1. Place your dates into a food processor and process until the dates are broken up and start to form a ball.
  2. Add in all of your other ingredients and process until combined. It will probably look quite crumbly and not come together easily so gradually add in some water (about 1 tbsp) until your mix comes together.
  3. Form your mix into balls with your hands and place in the fridge to chill.
  4. These raw bites keep best in the fridge, however, they can also be frozen for longer storage. We keep them in the freezer and take one out whenever we feel like one!

NOTES:

*You can also use just under 1 1/2 cups raw almond meal (140g) if you don't have whole almonds
