Recent Things - What we've been up to

Why hello lovely ones! Today we're enjoying a day off as it's a public holiday in Australia! We're planning on being lazy and having a movie day - but now that the sun is shining I think we need to head outside for a bit too! 

I thought I'd share another Recent Things post so you can catch up on what we've been up to!

Reading Nook
Recent Hiding Spots: 
If you're looking for me - you'll find me here. Huddled up in a blanket on my favourite chair in Jesse's computer room. You'll see a notebook there (my current "recipe scribbles" book), a pen (to scribble recipes or random thoughts in said book), my iPhone, likely my pretty pink bible. 
You'll also likely find me with a cup of tea :P (and yes, the little thing poking out on the left hand side is an iPhone charger cable)

Side note: I actually bought a new "kids bible" just because it was pink - but it's exactly the same as Jesse's on the inside - apparently they don't think adults want pink bibles. I've got news for them!

Feedburner exceeded limit

Recent Frustrations: 
Anyone who follows Southern In-Law via RSS (using Feedly or Bloglovin etc) may have been missing the latest posts from their feeds - but nevertheless, I have fixed it! It turns out I blab way too much and exceeded Feedburners File Size limit :P A big thank you to the lovely Amelia who let me know the feed was down!

Blood test ordersOther Frustrations: 
Being sick! I've been really ill lately which we suspect is because my iron levels have hit rock bottom. You see, I'm allergic to iron supplements and my body doesn't absorb enough iron as I'm a coeliac and have major absorption issues. I'm heading to see a Haematologist this Thursday to organise an iron transfusion at the hospital so prayers are definitely needed! Right now I'm just incredibly exhausted - but still kicking along!



Bike riding in the park

Recent Enjoyment: 
Bike riding with my husband! Though, it didn't turn out to be such a great idea afterwards as I was totally wiped out, it was fun at the time! I don't know how people ride bikes millions of kilometres though... My little legs were certainly not made for pedaling miles and miles because bike riding totally tires me out! We just rode around the local park and back home again.

I do wish my bike was pink, but the bargainista in me kicked in and I bought the purple bike because it was reduced to $59 at the time ;P 

Healthier Australian Recipes

Recently Celebrating - Australia Day (and week!): 
Yesterday was Australia Day and whilst we didn't really celebrate yesterday, we've been celebrating all week with Australia Week on the blog!

Recent Addictions: 
Ginger tea - just fresh ginger, peeled and chopped and placed into a teapot with boiling water. Leave it to infuse and cool and then drink! I've not been feeling nauseous lately, just run down, but I'm convinced that somehow the ginger tea helps... if not just because it tastes so good.

Snow in Alexandria Louisiana

Recently jealous of: 
The snow that Jesse's family have been having in Louisiana! My lovely MIL sent us these photos and Jesse is so incredibly jealous. It never snowed that much when Jesse was living in Louisiana so seeing photos of his friends sledding and playing out in the snow is so not fair ;P

Current giggles: 
My MIL also sent me a photo of Jesse's Dad holding him as a baby - and as if they don't look so much alike?! I'm anti facial hair, but Jesse thinks he needs to grow a beard and mustache so he can recreate this photo when we have kids. (Who else doesn't like facial hair? It totally skeeves me out :P) 

La-De-Dah Scrapbooks

Recent Things I Should Be Doing:
Working on my gorgeous La-De-Dah scrapbook! All of the bits and pieces are sitting right beside me on my desk - I just need to get wedding photos printed and start working on it. I'm always scared to start projects like this because I don't want to mess them up - and once I get started, I don't usually like to stop. I need to set aside some time to start working on it though or it will never get done!

If you're wondering what La-De-Dah is and where you can buy your own scrapbook and accessories - check out their website! You can get all of the bits and pieces at Big W and they are super cheap compared to other scrapbook kits! The little bits and bobs (tapes/stickers/inserts/envelopes) range between $1-5 per pack and the journal itself is just $15 and totally cute with themed papers!

The last Lamington Bite bites the dust

Recently Devoured: 
The last Raw Lamington Bite (which I took a very blurry photo of - and you ask why I don't photograph my eats ;P) which was devoured in 3.01 seconds, straight from its tupperware container holding cell. I'm planning on making more today because they're crazy delicious. Can't stop won't stop.

Our Church family. Sundays are by far my favourite day of the week - I love our Church.

  3. This was good! Not brownieish in the way I was expecting, but I think this will be a new go to treat for me when I'm craving something sweet and unhealthy but don't want to actually eat something unhealthy :). Mine tasted like really dark chocolate turned into a dense, spongy/chewy brow ie, which I liked with a tall glass of milk. I think in the future I would use I Tbsp less of cocoa powder and maybe some fun add-ins like peanut butter or coconut. Thanks Kristy!

  4. I have made these twice now, and I have to say that if you are looking for a way to jazz them up a bit without ruining their healthy qualities, add chopped walnuts and/or cinnamon! Otherwise, I love the recipe!

    I am so glad you love them! Adding nuts or spices is the perfect way to jazz them up - we love adding pecans!

    Hey Samantha, I'm so glad you liked the recipe! It's definitely not exactly like a brownie in texture, but the flavour is all there! Peanut butter or coconut sound like the perfect additions!

  7. When we were kids, my mom would bring us a 5-stick pack of gum each from the store. We were poor so a pack of gum was a treat. My brother's was Juicy Fruit and mine was Big Red. Since we didn't get it that much I always broke a piece in half and saved the other half for later. My brother would shove the whole pack in his mouth! Even now, as an adult, I still break my gum in half. And people give me strange looks over it....

    So sorry that you don't feel well. I don't quite understand your allergy to iron. Can you not take any supplement? I used to have low iron when I was young and I'd get iron shots (needles in Australia?) have you asked about that?
    Also, so lucky to have found a good church! I have been searching here for years and haven't found one that's quite right. I still go to the one in our area but it's hard to find one that really speaks to young people!

    No, I can't take any supplements orally - we tried a variety of tablets/tonics/liquid iron and I had allergic reactions to all of them. Apparently it's quite common in people with sensitive GI systems. We did talk about the needles but it's more common to have an allergic reaction to the needles than to the infusion so they decided the infusion would be the safer option considering I'm allergic to supplements and so sensitive to medications and treatments.

    That's a shame that you haven't found a church that's the right fit! Our church has a service for young people in the evenings, but we've actually found that we fit in best with the family style Sunday service!

    Hi Gloria, this only makes a small "brownie" so we usually cook it in mini ramekins - but you could use a mug or small bowl if you don't have one and feel free to double the recipe if you'd like a larger serve!

  13. I agree with some of the comments- it was more of a mousse consistency, after baking and leaving to cool. Followed the recipe as says. The chocolate was a little too stronge - I did the full 3tbsp.

  14. Hey Michelle,
    As the recipe says it is a gooey brownie with the outsides firmer and a soft gooey middle but it shouldn't be mousse like. Perhaps you need to bake it for longer? Was your top set at all?


    They are also very chocolatey - Definitely try using less cocoa or more sweetener next time if you're making it again :)
