Recipe: Cheesy Quinoa Bakes



Oh do I have a recipe for you! This is my current favourite dinner. I make a double batch and then pop the cooked bakes into the freezer for a quick and easy dinner. 

This is also one of Jesse's favourites, which is huge considering it's quinoa! Jesse has always been a bit skeptical of quinoa but these Quinoa Bakes were an instant winner. 

They are easily adapted to suit your tastes. As Jesse is a meat loving man, I add some chopped ham to his - but you could also add chicken, other veggies, or whatever you feel like!



These Cheesy Quinoa Bakes could also be described as a Crustless Quinoa Quiche, Quinoa Frittata, Quinoa Egg Bake - whatever you want to call it! They can also be made into muffins which make them great for kids or meals on the go!

Best of all, these Quinoa Bakes have a secret Veggie addition which will get even the fussiest of eaters loving their veggies. 

I just ran a large Zucchini through my Tefal Fresh Express (using the Orange Cone) but you can also add whatever vegetable you like - capsicum/bell pepper for a Southwestern or Mexican Style Bake, spinach, kale or whatever else you like! 


Cheesy Quinoa Bake Recipe 
makes 3 large single serve bakes 
3/4 cup Quinoa, cooked
2/3 cup Egg Whites or 2 Eggs* (I use Naturegg Simply Egg Whites)
1 Medium/Large Zucchini, grated (I used the Tefal Fresh Express Orange Cone)
1 cup Parmesan Cheese
1-2 tsp Garlic Salt (this will depend on your tastes)
1/2 tsp Tumeric (optional but highly recommended)
Cracked Pepper, to taste
Optional: herbs/spices/flavourings of your choice, different vegetables, chopped ham, cooked bacon, meat of your choice, beans etc**

Preheat oven to 180°C/355°F.
Combine all ingredients in a large mixing bowl. Pour into baking dishes lined which are either lined with baking paper or well greased - you can use 3 single serve baking dishes/ramekins or a small cake tin or pie dish.
Bake for 30-40 minutes or until set and golden.
Serve immediately or freeze once cooled for a quick meal solution.

*I'm not a fan of "eggy flavour" so I use Egg Whites and they don't taste like eggs at all - they're just plain delicious!
**For Jesse, I add chopped ham however you can add just about whatever you like!

  1. These look yummy! I've only made cheesy quinoa bakes once and I added veggies. But, these look great. I'll probably add some black beans to mines and maybe some tofu or cooked ground turkey.

    1. You can definitely add veggies, beans or whatever else you like - that's what I love about this recipe! It's so easy to adapt and just a few little changes can make a whole new recipe!

    1. Hi there, I don't count calories so I'm not certain - however one pinner recently pinned them with the comment "under 300 calories" - but I'm not sure what ingredients they used
