Would you believe me if I told you these rice crispy treats were Gluten Free, Dairy Free, Refined Sugar Free and Vegan? Well you certainly should!
They're a perfect lunchbox treat, party food or sweet snack - and they're so simple to make!
Originally I made Peanut Butter Rice Crispy Treats, but I decided I would add a little bit of extra oomph! Because after all, the only thing better than peanut butter is peanut butter mixed with chocolate - right?!
These are the perfect treats to make for kids - and they won't know for a second that they're any different than the sugar laden LCMs or high fructose syrup filled rice krispies treats .
They can be tailored to your tastes - using as much or as little cocoa as you like to make them rich and chocolatey or just have a touch of cocoa flavour. Cut them into small squares of make them into Chocolate Peanut Butter Rice Crispy Bars by making them bigger! Just wrap them up and they're ready to be popped into any lunchbox!
Chocolate Peanut Butter Rice Crispy Treats makes 12-16 squares or 8 bars
Gluten free, vegan, dairy free, refined sugar free - no bake recipe
Adapted from my Peanut Butter Rice Crispy Bars
3 cup rice crispy cereal (check it's GF)
1/2 cup peanut butter
1/2 cup rice syrup (any other sticky sweetener such as honey or agave would work too)
1 tsp vanilla extract
1/8-1/4C unsweetened cocoa powder*
1/8-1/4C unsweetened cocoa powder*
Line a 9x9 baking pan with baking paper/wax paper.
In a large bowl, measure out cereal, set aside.
In a small saucepan over a medium heat melt peanut butter, rice syrup, vanilla and cocoa.
Pour the peanut butter mixture over the cereal and mix until all of the rice crispies are coated.
Pour out the combined mixture into the baking pan. Using a small sheet of baking paper, press down the mixture firmly into the pan.
Place the pan into the freezer for half an hour or chill in the fridge until set before cutting.
Store bars in the fridge or freezer or in an airtight container in a cool cupboard.
*Lovers of rich chocolate or dark chocolate flavours, you'll probably prefer to use 1/4C - if you're not so much of a fan of cocoa flavour, use less! :)

I'm a dark chocolate or mildly dark chocolate fan - I think it's even better if you add some mint (especially crunchy mint!) or peanut butter into the mix. Mmmm!
Ooh I really want to try these because I'm used to making them with marshmallows and these sound a lot healthier! :D
