Recipe: Fudgy Banana Brownies

Banana Brownies

I think it's safe to say I'm loving brownies at the moment. It's also safe to say I've always been a lover of bananas. So of course the recipe I'm sharing with you today was a naturally combination! 

Bananas and chocolate were made for eachother - add peanut butter into the mix and you have me sold! While these brownies don't have peanut butter in them, you can bet your bottom dollar I put peanut butter on top!

These banana brownies are fudgy and have the subtle flavour of banana. They're cakey while still being fudgy and have a rich chocolate flavour - though if you're not a rich chocolate fan, I'll give you the substitution to make them not so intense! The added chocolate chips only make them 100x better! They're definitely not just another batch of gluten free brownies.

They're really simple brownies to make and don't take much time at all! They're low in fat and can be made gluten free, dairy free, wheat free and/or vegan - just depending on the ingredient choices you make! I used Almond Breeze for the milk plus vegan chocolate meaning the brownies were vegan too!

Gluten Free Banana Brownies

Fudgy Banana Browniesmakes 14-16 brownies that can be gluten free, wheat free, dairy free and/or vegan and are low in fat!
Adapted from Emily at Daily Garnish

2 cups gluten free flour/gluten free pancake mix/plain flour/whole wheat flour 
2/3 cup brown sugar 
3/4 cup cocoa powder *see substitution for a less intense brownie 
1 tsp baking powder
1/2 tsp salt 
1 1/2C unsweetened almond breeze (or milk of your choice)
1 cup of mashed banana 
1 tsp of vanilla 
optional: around 1/2 cup of chocolate chips 

Preheat oven to 180°C/350°F
Prepare a muffin tin or grease/line an 8x8 baking dish 
In a bowl combine flour, sugar, cocoa, baking powder and salt. 
In a medium bowl mash banana, add milk and vanilla and stir to combine. 
Pour wet ingredients into dry ingredients and mix until just incorporated. Fold in chocolate chips. 
Divide mixture among muffin cases or pour into baking dish - it will make ~14 muffins.
Bake for 20-25 minutes for muffins or for 25-30 minutes in the baking dish - the edges will come in from the sides and a skewer inserted into the middle will remove clean.

*If you're not a fan of intense chocolate flavour, which 1/4 cup of cocoa for an extra 1/4 cup of flour
