Phew! I feel like I've hardly had a chance to take a breath this week. We've been go go go but we've still had time to create some deeeeeelicious meals - so this week we're doing things a little bit differently with our Recent Things post!
I'm sharing lots of delicious eats and a super simple but oh so delicious recipe that we enjoyed for dinner last night!
Recent Favourite: Peanut Butter on Banana Bread <3 Whether it's our Best Ever Healthy Banana Bread Recipe, our Healthy Paleo Banana Bread Recipe or this Ricotta Banana Bread Recipe (which we'll be sharing soon!) it doesn't matter, I'm simply obsessed :P
Recent Addiction: Cold pancakes..... Jesse thinks I'm absolutely mental for liking pancakes cold - but they're so so good! This week I've been loving these Healthy Buttermilk Pancakes cold as well as a new super thick and fluffy pancake recipe we'll be sharing soon (the recipe is now on the blog!) - I just freeze the leftovers whenever we make them and chill them in the fridge overnight so they're ready to eat in the morning!
Recent Surprises: Our friends at Australian Eggs sent us a bunch of eggscellent goodies this week which Jesse immediately snapped up. He's on #TeamRunny when it comes to eggs, but I'd probably say I'm on team frittata. Frittatas have to be my favourite way to eat eggs whilst Jesse will eat them any way, shape or form.
Recent Obsession: Wraps! Woolworths has these new BFree Gluten Free Wraps which (whilst ridiculously expensive) are so so good. I was so excited to have a gluten free wrap that actually tasted good and WRAPPED! It did not crack - and I wrapped it again and again because it was a novelty ;P Oh what a sad life I lead.
This wrap was filled with ham, hommus, feta, lettuce and salad fixings and it was sooooooooo delicious!
Recent Rekindled Love: My beloved Chocolate Protein Breakfast Bakes! Smothered with peanut butter and served with a side of super sweet strawberries, of course!
Recent Plans: We've got a busy weekend ahead but we decided tonight has to be date night as our Youth Group is off for the school holidays! Jesse picked "Go See a Movie" out of our DIY Date Night Jar (which we're still using a year and a half later) and we're going to go and see the new TMNT Movie tonight!
Recent Recipe Success: I tried out a new dinner idea last and it was so so good! Jesse isn't usually a pasta salad fan, however, I decided to take a change and make this Chicken Caesar Pasta Salad for dinner for us last night and he loved it! Here's the not quite a recipe;
Chicken Caesar Pasta Salad Recipe serves 1, easily multiplied
1 serve pasta (we used gluten free penne)
1 serve chicken, grilled and seasoned however you like
Cos lettuce, washed and torn into pieces
~1 tbsp grated parmesan cheese
~1-2 tbsp caesar salad dressing (we used a gluten free Kristy friendly one from Zoosh)
Salt and pepper, to taste
Simply cook your pasta according to packet directions, drain and rinse in cold water and set aside.
Mix your lettuce with your grilled chicken (warm or cold, it's up to you - we had ours warm!) and stir through your pasta, parmesan and dressing until all of your salad is coated.
Serve and enjoy!
Simple but oh so delicious - and perfect for warmer weather!

I'd love to try Peach or lemon. These sound great! I drink a HEAP of water, and try not to drink soft drinks (the occasional diet coke here and there) but I think I'd really enjoy these - especially, as you say, during summer! x

I might just steal it, but we'll see how that will work out since dates are very sporadic around here, as much as we know that they're crucial to marriage...baby and no sitter, you know. Hah! ;) And pb is always good no matter what, and so is banana bread, so the two combined is heavenly....<3

ReplyDeleteThe date night jar was the best idea I've ever had because it means we actually go out on date nights now haha. Jesse is HOPELESS when it comes to picking so he would never decide on a place to go and we'd just end up sitting at home - but now he just picks something out of the jar ;P
ReplyDeleteI used flax egg to substitute and the muffins cooked unevenly. The tops were cooked and the bottom was golden brown but the inside was a bit raw. Any suggestions?

ReplyDeleteIt could be either the pans you're using or the heat of your oven. Every oven is different - whether it's fan forced/gas/electric/has one element or multiple etc. You may need to turn the heat down a little lower or cover the tops of your muffins halfway through baking to ensure the insides cook all the way through.
I'm wondering if using 1.5 cups gluten free AP flour would be an ok substitute for the buckwheat/other flour...I ran out and really wanted to make these without running to the store!
ReplyDeleteTo sure is! Just add an extra two tablespoons if you're using 1/2 cup of honey :)
ReplyDeletePerfect Result! I used 2 eggs, Live Gfree Pancake Mix for the plain flour, buckwheat flour, 1/4 cup honey and 3 TBSP Stevia in the Raw. These muffins came out like their gluten-ous counterparts--moist and fluffy :)

ReplyDeleteyou just saved my life! thank you for this recipe. my son (4) is gluten intolerant and really wanted pumpkin pie for thanksgiving because he read about it in a book. when I talked to him about making the pie he wasn't sure if he would like it or not so we settled on pumpkin muffins. I found your recipe and he loved them! he ate 6 mini muffins before bed and kept saying "these don't taste yucky". thank you!

ReplyDeleteCould I sub coconut or almond flour for the buckwheat or oat flour options?
ReplyDeleteHi Brittany, no you cannot as both almond flour and coconut flour have different properties to regular flours and won't give you the same results when substituting one for one
ReplyDeleteI just made these using spelt flour for all of the flour and had to extend the cooking time by about 5 minutes, but they turned out great. My toddler loves them. Thanks!
